Aioli

Aioli is a traditional Provencal sauce made of garlic, olive oil and egg.

Aioli can be described as a garlic mayonnaise.

It is traditionally made of garlic, olive oil and eggs. In this recipe, we also use Dijon mustard.

Ingredients (makes about 1 cup/250ml/9fl oz aioli)

3 garlic cloves, minced
1/8 tsp salt
2 large egg yolks
1 tbsp freshly squeezed lemon juice
1 tsp Dijon mustard
170ml/6fl oz canola oil
60ml/2fl oz extra-virgin olive oil

Preparation method

Use a mortar and pestle. Make a paste out of garlic and salt.

Take a bowl and whisk together the garlic mixture, egg yolks, lemon juice and mustard.

While whisking constantly, you add the canola and olive oil. Whisk until the sauce is thick.

The aioli can be used immediately or stored in a container in the refrigerator for up to one week.
