Vanilla Cake

This is a cake that is quick and easy to make. It can be frozen and is perfect for serving if you get a surprise visit.


250g/8 4/5oz margarine
1l/33 4/5fl oz vanilla sauce
500g/1 1/10lb caster sugar
2 tsp vanilla sugar
6 tsp baking powder
800g/1 3/4lb wheat flour
Pearl Sugar

Preparation method:

Melt 250 grams of margarine and cool.

Pour the cooled margarine into a bowl and stir in the vanilla sauce, white sugar, vanilla sugar, baking powder and the wheat flour.

Locate a roasting pan that you rub with margarine, then sprinkle a little flour over the surface, this will make sure the cake will be easier to get out after cooking.

Pour the batter into the pan and spread well beyond. Sprinkle it with cinnamon and sugar pearls.

Bake for 30-40 minutes at 180C/350F/Gas 4. Take the cake out and cool it on a grid. Cut the cake into suitable pieces.

The cake can be served freshly baked, or you may choose to wait until it is cooled and then freeze for later.
