Spinach Raita

This variant of the classic Indian side dish is quick and easy to make, but tastes fantastic!

The main ingredients are yoghurt and spinach.

Raita is a perfect side dish when eating spicy Indian or Pakistani dishes.

Ingredients (serves 6 as a side)

1 bunch spinach, without ends
1/3 cup chopped fresh mint
260ml/1 cup Greek yoghurt
1/2 tsp ground cumin
1 shallot, finely chopped
2 garlic cloves, finely chopped
1 tsp fresh ginger, finely grated

Preparation method

Cook the spinach in a large saucepan of boiling water for 30-45 seconds or until wilted.

Drain and rinse under cold water. Then drain and squeeze out the excess water from the spinach. Then you finely chop the spinach.

Combine the yoghurt, mint, spinach, cumin, shallot, garlic and ginger in a serving bowl. Season with salt and pepper.

Put the raita in the refrigerator for a little while before serving.
