Sandkaker (Sand cakes)

These traditional Norwegian Christmas cookies will melt on your tongue! They are easy to make and contain few ingredients.

Here is the recipe for these delicious cookies that the Norwegian’s call Sandnøtter or Sandkaker:

Ingredients

250g/8oz plain (wheat) flour
250g/8oz potato flour
250g/8oz caster sugar
1 tsp baking powder
250g/8oz baking margarine
2 eggs

Preparation method

Mix the wheat flour, potato flour, sugar and baking powder together

Then you add the margarine and crumble it together. After that, you stir in the 2 eggs until the dough is smooth.

Roll small balls and place them on a baking tray.

Preheat the oven to 190C/375F/Gas5.

Bake them in the oven for about 10 minutes, until the underside of the cookies are starting to get pale golden-brown. When they are done, put them on a wire rack for cooling.

These cookies are best stored in an airtight box.
