Ristopper (Rice muffins)

Ristopper is the favourite of many Norwegian children at Christmas. Theses “muffins” have a wonderful flavor and are easy to make!

The recipe below can easily be halved if you prefer not to make too many of the “muffins”.

Ingredients

4 eggs
4tbs caster sugar
100g/3 1/2oz milk chocolate
100g/3 1/2oz dark cooking chocolate
250g/8oz coconut butter
approximately 170g/6oz puffed rice

Preparation method

Melt the coconut butter and chocolate together and then cool.

Whisk together eggs and sugar until fluffy. Then add the melted mixture of coconut butter and chocolate and stir.

Then stir in the puffed rice gently to the mixture.

Use two tablespoons to distribute the mixture into muffin cups. Then cool them before serving.

The Ristopper can be stacked above each other in a cake box, when they have stiffened. Keep them cool, preferably in the refrigerator.

Actually you can decide the amount of puffed rice you want to use your self, depending on how much “chocolate” you want in each ristopp.
