Provencal Chicken Casserole

This is an easy dish to make, but great for both everyday and festive occasions. You can make it quickly by using a herbs de Provence spice mix, or you can make the spice mix yourself.

Ingredients (Serves 4)

650g/1lb 7oz skinless chicken fillet
salt and freshly ground black pepper
6-8 fresh champignon’s, sliced
2 cloves finely chopped garlic
300ml/1 1/5 cups whipping cream
1 tbsp Dijon mustard
1 tbsp Herbs de Provence/Provencal spice mix

Preparation method

Start by cutting the chicken into large chunks, season slightly with salt and pepper, and gently brown it in a frying pan. It is recommended that you use a deep frying pan, as the sauce will be made in it.

Remove the chicken from the frying pan and add the sliced champignon’s. Add the finely chopped garlic. Then put the chicken back in the frying pan and add the whipping cream, seasoning and the dijon mustard.

Let the mixture simmer for 15-20 minutes. The longer cooking time, the thicker the sauce will be.

We prefer to serve this dish with fresh pasta such as tagliatelle, or rice, and ,if you want, a salad of your choice.

Provencal spice mix:

3 tbsp marjoram, dried
3 tbsp thyme, dried
3 tbsp dried savoury
1 tsp common basil, dried
1 tsp rosemary, dried
0.5 tsp sage, dried
0.5 tsp fennel seeds
