Mandelmakroner – Almond macaroons
Mandelmakroner are traditional Norwegian Christmas cookies that are easy to make and tastes absolutely fantastic.
In brief, there are few ingredients and they are easy to make!
Ingredients (about 48 small macaroons)
2 egg whites
180g/6oz icing sugar
250g/8oz ground almonds
Preparation method
Beat egg whites with the icing sugar until it becomes a stiff meringue mass.
Then you add the ground almonds to the meringue mass.
Then use two teaspoons to shape small “cakes” that you put on the baking tray.
Preheat the oven to 180C/365F/Gas 4.
Bake them in the oven for about 12-15 minutes. When they are done, put them on a wire rack for cooling.
These cookies are best stored in an airtight box.
