Caramelised clementines
Caramelised clementines is perfect as a dessert at Christmas. Clementines are in season!
Did you know that an average Norwegian eats six kilograms clementines a year, most at Christmas?
Ingredients (for 2)
100g/3 1/2oz caster sugar
2 peeled clementines
1 lemon, juice only
1 orange, juice only
25g/1oz unsalted butter
50ml/2fl oz double cream
Preparation method
Melt the sugar in a frying pan over a low heat until it melts and becomes a caramel.
Add the clementines to the caramel and mix it all together so that they are coated in the caramel.
Move the clementines from the frying pan with the caramel to a non-stick baking sheet. Put the clementines in the freezer for about 4 minutes.
Then we start making the caramel sauce.
Add the orange and lemon juice to the caramel and mix well. Then add the butter and cream, mix, and let it cook for 3 minutes. Then set it aside.
Put the clementines on a plate and drizzle the caramel sauce over the top of them.
