Caramel Cookies
These traditional Norwegian Christmas cookies taste amazing. In Norway they are called “karamellkaker”.
Ingredients
400ml/14fl oz plain (wheat) flour
400ml/14fl oz caster sugar
100ml/3 1/2fl oz double cream
100ml/3 1/2fl oz dark syrup
300ml/10 1/2fl oz melted baking margarine
400ml/14fl oz oatmeal
1tsp baking powder
1tsp vanilla sugar
Preparation method
Mix the wheat flour, caster sugar, oatmeal, baking powder and vanilla sugar together.
Then you add the syrup and double cream, and mix it together. Finally, you stir in the melted margarine.
Use 2 teaspoons to make small “lumps” which you then place on a baking tray.
Preheat the oven to 180C/350F/Gas4.
Bake them in the oven for about 12-15 minutes, until they get “flat” and golden. Let them lie a while on the baking paper, so that they get crisp, before they are taken off.
These cookies are best stored in an airtight box.
